The grapes undergo traditional vinification, beginning with immediate pressing upon arrival at the winery using pneumatic presses. The juice is settled and cold-stored for 48 hours before fermentation in stainless steel vats, carefully temperature-controlled at 16–20°C to preserve the wine’s fresh, aromatic profile. The wine is aged on its lees in stainless steel for 8–10 months, with regular stirring to enhance depth and complexity.

The Chablis region’s unique terroir is defined by a limestone plateau interspersed with valleys. The Premier Cru vineyards are situated on ancient Kimmeridgian soils, a mix of marl and limestone layered with tiny fossilised oyster deposits, remnants of the warm, shallow sea that once covered Burgundy. This distinct soil imparts the signature minerality and crisp character that Chablis is known for.
