Viognier’s exotic opulence produces a wine of seductive and perfumed pleasure. A low
yielding, high quality vintage producing excellent, intense wines in small quantities.
Unusually all of the Viognier was picked on the same day, due to the small crop. It was picked
on March 1, and bottled Feb 2023. The grapes were brought to the winery in the picking
buckets and then transferred to the sorting table to remove leaves and any damaged grapes.
Very gentle whole bunch pressing to minimise phenolic extraction. The juice was settled and
racked off solids before wild fermentation in old barrels. It stayed on its lees in the barrels,
with some stirring, for about 10 months.
