I’d like to turn your attention to one more Cabernet from Kaesler, the ‘estate’ one. Not that I drink lots of it and from the Barossa, but it made an impression on me, the purity, the fine definition of the variety, all the Cabernet trimmings served straight up. Mint chocolate, the After Eight pralines, classic blackcurrant fruit, a hint of graphite tones, yes-ripe, but smooth, medium-bodied presence. All you’d look for in a dictionary definition of a Cabernet, not over the top, just right, tannins smooth and settled into fruit and oak.

Cabernet sauvignon sourced from two estates planted in 1970 and 1990; matured in new and seasoned French oak for 16 months. Bright crimson with aromas of blackberry, blackcurrant, créme de cassis, sandalwood, cedar, licorice, kirsch and pressed flowers. Fine, compact tannins provide the framework, bright acidity to pulse and the wine, while drinking nicely now will improve with careful cellaring.

This supple and delicious cabernet has notes of black cherries, blackcurrants, orange rind and dark chocolate. It’s ripe and plush with full body and a tasty finish.

The 2021 Cabernet Sauvignon offers diffuse aromas of blackberry and chocolate with a faint cedary edge. It's a plush, early-drinking style thanks to simple fruit pastille flavors and open-knit tannins supporting a soft, supple finish.
