The 2021 Coupage Tradicional La Mimbrera exemplifies this approach perfectly. This wine is a blend of 70% Tempranillo, 25% Garnacha and 5% Viura, sourced from Ábalos in Rioja Alta. It underwent aging for up to 12 months in oak barrels, followed by an additional six months in amphorae. Exhibiting a garnet-red hue, it presents aromas of sour cherry and balsamic, intertwined with hints of bay leaf and thyme, all enveloping a core of black fruits. On the palate, it is dry, juicy and grippy, with a fairly chalky texture that lingers pleasantly. The 2021 offers a modernist twist while respecting traditional elements.
