Grignolino is a red vine variety with a personality all of its own that we are proud to grow and vinify, our territory is one of the most renowned for the production of this native variety, considered the Prince of our hills. The bunches harvested in the morning in the coolest hours are placed in small boxes and quickly transported to the cellar. A soft crushing follows and begins its fermentation in small steel tanks, then we carry out daily, delicate pumping over to extract the natural colour from the skins. Once the alcoholic and malolactic fermentation are completed, the wine is left to rest for a couple of months in steel tanks and several weeks in the bottle. To the eye it offers a bright ruby red colour with orange nuances. The nose is dominated by notes of small red fruits, sage, chamomile flowers and dried fruit. In the mouth it shows direct, with a delicate tannic texture. The natural acidity of the grapes makes it a fresh, delicate and refined wine, the drink is easy and persuasive.
